For the feisty Fire Signs (Aries, Leo, Sagittarius), there is a robust, spicy breakfast dish to greet the rising Sun! I have noticed that even those with their Venus in Fire signs (especially Aries) truly seem to love a little spice… which makes sense, as Venus rules taste!

Sin Huevos Rancheros


Huevos Rancheros has always been one of my favorite breakfast dishes, but when I went plant-based, I missed it... until I realized that if I piled on enough of the fixins’, it was just as hearty and satisfying without the egg! Hence, the name Sin Huevos, meaning “without eggs.” Of course, you can still throw a couple of sunny-side up eggs on this if you prefer.  And if not, I promise it will be so delicious that you won’t even miss them! 

This recipe is packed with nutritious foods and antioxidants.  The spicy sauerkraut may seem like an odd addition, but the acidic zip is the perfect contrast to the rich beans and salsa.  Also, the plain coconut milk yogurt is used as a healthy and delicious sour cream substitute.  So, this dish is loaded with probiotics! 

Also, it uses nutritional yeast, and while these flavorful flakes are often used as a savory cheese or bouillon alternative, they are also a great source of vitamin B12! Vitamin B12 is commonly deficient in a vegan diet as it can only be obtained from animal products like meat or through vitamin supplements.

This recipe rocks because it is delicious, super healthy, and F-A-S-T to prepare!

1 Slice German Rye Bread (I use Lidl store brand, but any dense brown bread that comes in a pack that looks like a little brick will work.  This hearty bread provides the perfect texture to hold the ingredients without getting soggy.)

3 Tbsp Black Beans (canned)

40 Grams Baby Spinach (about 3 unpacked cups)

5 Tbsp Prepared Salsa

40 Grams (about 4 Slices) of Avocado

28 Grams (1 oz) Cleveland Kraut Gnar Gnar (Sauerkraut with Jalapeno and Bell Peppers)

2 Grams Nutritional Yeast (about 1-1.5 tsp)

3-4 Tbsp So Delicious Unsweetened Plain Coconut Milk Yogurt

2 Tsp Chives

1 Tbsp Chopped Cilantro

Olive Oil

Garlic Powder

Chili Powder

Salt

Onion Powder

Non-Stick Canola Oil Cooking Spray


  1. Toast the rye bread.

  2. Spray the skillet with non-stick canola oil cooking spray.

  3. While bread is toasting, heat black beans in a skillet over medium low heat.  Add garlic (chopped or powder), chili powder, and onion powder to taste.  Add a pinch of salt.

  4. On the other side of the skillet, add the baby spinach.

  5. Add a pinch of salt and a sprinkle of garlic powder to the spinach and frequently stir it.

  6. When the beans soften and start to split, remove from heat (about 1-2 minutes).  Spoon them over the bread and use the back of a fork to mash and spread them.

  7. Remove the spinach from the skillet and spread over the mashed beans.

  8. If the salsa was in the fridge, briefly warm it in the skillet (about 30 seconds) to remove the chill.

  9. Pour the salsa over the spinach.

  10. Sprinkle the nutritional yeast over the salsa.

  11.  Layer on the avocado slices.

  12. Spread the sauerkraut over the avocado.

  13. Spoon on the dollops of yogurt.

  14. Drizzle with olive oil (don’t skip this step - the richness of the oil really makes a difference).

  15. Sprinkle the chives and/or cilantro over everything.

Feel free to be creative and add whatever toppings are your favorites - Black Olives, Sliced Jalapeños, Shredded Mexican Style Cheese or Shredded Vegan Cheddar, Chopped Red Onions, or whatever else you prefer!
